Mumma D’s Cream of Chicken Dinner

Mumma D’s Cream of Chicken Dinner
4-8 Servings

1 pound Chicken Breast, cut into ½ inch pieces
2 Cans of Low Sodium Cream of Chicken Soup
1 Can of Original Cream of Chicken Soup
1 Tablespoon Olive Oil
2 Teaspoons Salt
1 Teaspoon Black Pepper, finely ground
2 Cups White Rice, cooked
1 Bag of Mixed Frozen Vegetables
1 Stick of Butter, for the table

Cut chicken breast to ½ inch pieces then mix with salt and pepper.
Heat large pot with the olive oil. (Canola and other vegetable oils work well too.)
Brown the chicken in the pot.
Once the chicken is browned and almost cooked through add all 3 cans of cream of chicken soup.
To get the remaining soup from cans, fill one can with water and scrape the sides to mix with the water. Pour that can into the next can and mix. Then pour the water mixture into the pot. Repeat this step with the third can.
Cook the chicken and soup mixture on medium-low heat and bring to a simmer for approximately 10-20 minutes, stirring occasionally.
Taste your seasonings and add more if necessary.
Cook the white rice. Follow the instructions of your rice cooker or use stovetop instructions.
Use a medium-sized pot with a steamer basket and lid to cook the frozen bag of mixed vegetables. Place the steamer basket in the bottom of the pot and pour enough water until just below the basket. Add the mix vegetables and cover with a lid. Cook over medium-low heat for approximately 8-10 minutes or until the vegetables are hot and tender.
When the cream of chicken has come to a nice velvety rich gravy, the veggies are cooked and the rice cooker has dinged, it is time to serve.

This is my favorite childhood dinners my mom would regularly make for us. Everyone in the house loved this dinner. There was never a fight about what to eat for dinner when we smelled this cooking. I loved to cook as a child and eventually my mom taught me this recipe. Although a simple recipe, I continue to make this for myself, family, and friends. The best part about this dish is the multitude of ways to serve it. My brothers favorite was mostly rice and chicken and nothing could touch. And he meant NOTHING!!! My mom very much enjoyed hers with a little pat of butter on the vegetables. My dad would literally inhale whatever was on his plate and then ask us if we were going to eat that piece of chicken. Usually, he would just take it anyways. I loved to mix all of the chicken, rice, veggies, and gravy together in one big bowl with little coarse ground black pepper on top and buttery biscuit on the side to slope up all the leftover gravy. Yum! Making this dish always brings me back home. It makes me think of being young watching Scooby-Doo on tv. My sweet southern grandma’s crazy obsession with white rice and steam cookers. My mom's love of lima beans and how much I hated them back then but love them now. My dad checking our plates and eating all the leftovers. Everyone enjoying the same meal!
